Where is the seaweed from?
We currently source our seaweed from the Kona region of the Big Island. We use pristine, ice-cold water that is piped into fish farm tanks from 3000 feet below the surface, so it's naturally rich in minerals and nutrients to give you an unbelievably umami flavor. Our temperate year-round climate is perfect for year-round growing and harvesting. Once our seaweed is mature, we remove it from our farm tanks, carefully inspect and wash it, and allow the Kona sun to do its work naturally drying our seaweed.
What type of seaweed do you use?
We are proud to be using a native red Hawaiian seaweed, Halymenia Hawaiiana. We are in the process of testing other types of seaweed, and we are also researching how we can utilize some of the invasive seaweeds that have become so prevalent over the last 30 years.
